No joke, this is the best sweet and sour you might ever make. Not too tangy. Perfectly Sweet. Delicious. The sauce is different than your everyday sweet and sour, but in the end makes for a delicious meal even the kids will eat! And the breading on the chicken... amazing. This is another tried and true recipe from my mom. It's a hit every time I make it and gets devoured in seconds! It's also super easy and super quick to make, which in my book, is the perfect dinner!
Sweet & Sour Chicken
Chicken
3-4 Chicken breasts, cut into slices or cubes
salt
1 C. flour
1/2 C. cornstarch
2 tsp. baking powder
1 tsp. baking soda
1 1/2 C. cold water
Vegetable Oil
Rub salt into chicken pieces. Mix flour, cornstarch, baking powder, baking soda, and cold water in a medium sized bowl. Set aside. Heat oil*.
Sauce
1/2 C. water
4 Tbsp. Cornstarch
4 Tbsp. Rice Vinegar
6 Tbsp. Catsup
1 1/3 C. Sugar
Place all ingredients in a sauce pan and bring to full boil, stirring constantly until thickened. Use a little less cornstarch for thinner sauce, or dilute with a little water if needed. Keep warm.
Dip chicken pieces into batter and deep fry until brown. Drain on paper towel. Serve with rice and garnish with sesame seeds, tomato, green pepper, pineapple or kiwi slices.

*Note: If you have a deep fryer, use that to heat and cook the chicken. Otherwise, heat oil in a pot to about 350 degrees. If you don't have a thermometer, test the oil by placing a drip of batter into the pot and watching how it cooks. If it cooks too quickly, your oil is too hot.

I'm a little confused....do you mix the flour part with the sauce and then dip the chicken in it? Or is the sauce for after the chicken is fried??
